LEFT OVER MAGIC BEEF,PRAWN AND VEGETABLE SKEWERS

I love simple food! Simple to cook, no fuss and yet so delicious and healthy. And with the weather looking a bit promising this week, this recipe is sure to be a hit at your picnics or perfect for when friends come over. I am sure most of us at some point have had left overs - either from previous meals or just forgotten ingredients that end up in the nooks and crannies of the fridge that only surface when it's fridge cleaning day.

My mum is a master chef at making meals out of the most bizarre combinations and ingredients so this recipe is a culinary ode to her. With the art of cooking, you have to go with your gut with flavors, mixtures and being okay to play in the cooking process because that's where the magic lies! For this recipe, you can use any combination of vegetables you have left over with beef and prawns, so get creative! Mine is a simple mixture of peppers, onions, broccolini with some cubed beef and prawns and that was it. There is no accurate measurement as well because it really depends on how much vegetables, meet

Ingredients:

  • Broccolini washed and parted dry

  • 500g of cleaned prawns

  • 1 pound cubed Beef

  • Red onions chopped

  • Red and Yellow peppers cut into sizeable bites

  • Garlic minced

  • Lemon juice

  • Coconut oil / Olive oil

  • Salt and Pepper

  • Special 'Abokye' Suya spice ( You can substitute this for Satay paste)

Preparation: ( makes 3 - 4 starter portions)

  1. Preheat your oven to 180 degree Celsius

  2. Wash and part dry cubed beef adding on the salt and pepper. Place on a foil or baking sheet lined pan and into the oven for 15 minutes

  3. In a small bowl, add one tablespoon of coconut oil and 2 tablespoons of the special spice adding in a teaspoon of the lemon juice and mix together

  4. Once beef is cooked for the first 15 minutes , brush spice mix onto it and back into the oven for another 5 minutes

  5. Add in rest of ingredients which is the vegetables and back into the oven for 5 - 8 minutes. We are looking for the vegetables to be cooked but crunchy. Add in salt and pepper as required

  6. Then add in the prawns for 3 minutes as this cooks quickly and the residual heat will cook it through.

That's it, your left over vegetables with beef and prawns is ready! You can have this on its own with a cold glass of your favorite beverage/drink  or as an accompaniment to another meal.
