Rice Water

Rice water! This simple and random meal was a staple breakfast growing up and let’s say I have been thinking a lot about my childhood favorite moments and reminiscing of making this with my mum! It was always a highlight! It is quick, easy for anyone to make, delicious and the best thing is that, it’s best made with leftover rice avoiding any food wastage! I say that’s a win-win situation

Ingredients:

-       1 cup of left over rice

-       2 cups of any milk of choice (I used almond milk)

-       1 teaspoon of Brown sugar (substitute brown sugar with honey, palm sugar or agave syrup)

-       ½ teaspoon of cinnamon

Preparation:

1.      Defrost whatever leftover rice  you have - I used a cup here! Also, I will suggest avoid microwaving it, so it’s not too mushy. Remember it’s going to be cooked in liquid so will soften later, just leave out to defrost!

2.       Get a pot on fire (low) and add 2 cups of your choice of milk (I used almond milk). Add in some brown sugar and bring to a boil (Re Sugar, add as much or as little as you want depending on how sweet your tooth is!)

3.      Once rice is defrosted, add into the pot of milk  and sugar and bring to a simmer

4.      To be fancy you can add some cinnamon or, vanilla essence to the milk when you’re adding the sugar

5.      Stir for 5 minutes or less until the milk is incorporated and it thickens up and voila! Your rice water or rice porridge is ready to have.
