GHANA LIGHTSOUP AKA “NKRAKRA”
Okay family, can someone tell me who invented light soup please because this is a ‘lituation’ especially over the past week in this cold and 'snowy' weather. So of course, I had to sort myself out when my cravings set in.
For those of you who are not aware of this soup, it is a simple tomato and garden egg soup enjoyed by most Ghanaians with fufu, banku, rice, or on its own. FYI this is NOT Pepper soup! Note that everyone makes it differently so you will find lots and lots of variations. As such, this is the way I like it and hopefully you will too when and if you decide to try it.
Ingredients:
3 Tomatoes
1 scotch bonnet
½ Kilo Mutton
2 large carrots
4 medium- sized okra
3 medium sized garden eggs (replace with eggplant should you not have garden eggs)
1 medium sized onion
4 tablespoons of my spice/herb mix ( Ginger, Garlic, Aniseed)
Preparation
Wash mutton thoroughly in either salt water or vinegar and pat dry with kitchen towel
Placing mutton in a pan, add spice mix, salt to taste, a cup of water and steam on medium heat
15 minutes into steaming, wash and add in whole garden eggs, onion, tomatoes and scotch bonnet
After 8- 10 minutes, take vegetables out and allow it to cool before blending into a fine paste
Strain blended vegetables into the pan of steaming meat, then check consistency and add water as desired and allow to simmer
Chop carrots, okra and add into soup about 20 minutes into boiling, reduce heat and allow to simmer for another 5 – 8 minutes
